Cooking Instructions 1
STOVE TOP 1. Sear the Meat: Add the seasoned Jamaican Curry Goat to a pot add a Cup of water. When the water is hot, sear the seasoned curry goat pieces for 3 minutes until they are yellow-brown on all sides. 2. Saute Aromatics: Add the chopped onion and minced garlic to the pot. Sauté until the onions are translucent and the garlic is fragrant. 3. Add Spices: Stir in the Jamaican curry powder, ground allspice, thyme, and scallions. Allow the spices to toast for a minute or two to enhance their flavors. 4. Pour in Liquid: Pour in the water, scraping the bottom of the pot to release any flavorful bits. If you like it spicy, you can add a whole Scotch bonnet pepper at this stage (remember to pierce it to release flavor without making it too spicy). 5. Simmer on the Stove top: Bring the mixture to a simmer, then reduce the heat to low. Cover the pot with a lid and let it simmer on the stovetop for about 2 to 2.5 hours, or until the meat is tender. Stir occasionally and add more liquid if needed. 6. Add Potatoes: About 30 minutes before the end of the cooking time, add the diced potatoes to the pot. This ensures they cook through without becoming mushy. 7. Adjust Seasoning: Taste the curry and adjust the seasoning with salt and pepper as needed. Remove the Scotch bonnet pepper if you added it earlier. 8. Serve: Once the meat is tender and the potatoes are cooked, remove the pot from the heat. Garnish with fresh cilantro or parsley. Serve your delicious Jamaican curry goat over rice or with traditional Caribbean side dishes. Enjoy your flavorful meal!
