      STOVE TOP 1. Sear the Meat: Add the seasoned Jamaican Curry Goat to a pot add a Cup of water. When the water is hot, sear the seasoned curry goat pieces for 3 minutes until they are yellow-brown on all sides. 2. Saute Aromatics: Add the chopped onion and minced garlic to the pot. Sauté until the onions are translucent and the garlic is fragrant. 3. Add Spices: Stir in the Jamaican curry powder, ground allspice, thyme, and scallions. Allow the spices to toast for a minute or two to enhance their flavors. 4. Pour in Liquid: Pour in the water, scraping the bottom of the pot to release any flavorful bits. If you like it spicy, you can add a whole Scotch bonnet pepper at this stage (remember to pierce it to release flavor without making it too spicy). 5. Simmer on the Stove top: Bring the mixture to a simmer, then reduce the heat to low. Cover the pot with a lid and let it simmer on the stovetop for about 2 to 2.5 hours, or until the meat is tender. Stir occasionally and add more liquid if needed. 6. Add Potatoes: About 30 minutes before the end of the cooking time, add the diced potatoes to the pot. This ensures they cook through without becoming mushy. 7. Adjust Seasoning: Taste the curry and adjust the seasoning with salt and pepper as needed. Remove the Scotch bonnet pepper if you added it earlier. 8. Serve: Once the meat is tender and the potatoes are cooked, remove the pot from the heat. Garnish with fresh cilantro or parsley.
